A self-guided set of classes for those looking to learn some pastry basics
Here it is, the super secret set of links to the Dropbox files for a self-guided Intro to Pastry class! I taught this as a set of 4 online workshops back in pandemic times, and I think the content still works quite well if you want a basic primer on laminated doughs (Session 1), shortbreads and tarts (Session 2), and cakes and curds (Session 4). There’s plenty of great content here to add to your baking arsenal, from pastry creams to sponge cakes to rough puff pastry to lemon curd. The only section missing here is session 3, which was enriched doughs—that’s because I’ve updated my brioche recipe and fillings and have already sent that out to paid subscribers last month, so you already can find all the same content on this Substack.
